Makin’ Banana Pancakes

We are big Jack Johnson fans, so it’s no surprise that as we were deciding what to do for breakfast this morning, Banana Pancakes came on Spotify, making the decision for us! What better day after St. Patty’s Day breakfast is there? OK, don’t answer that, I’m sure there are quite a few, but this one hit the spot for us.

PS… we celebrated St. Patty’s day at the Pint Pot Public House here in Eugene. Such a great local spot. Check ’em out!

Okay, but back to the pancakes. I was told they were the best version ever, so I’m sharing the recipe before I forget what I did:)

1/2 cup cashew milk, unsweetened
1/2 cup almond or rice milk, unsweetened
1 large egg
2 tablespoons coconut or vegetable oil
1 tablespoon brown sugar
1 tablespoon peanut butter (optional)
1 tablespoon baking powder
1/2 cup quinoa flour
1/2 cup all purpose gluten free flour
1 dash cinnamon
water, to desired consistency
1 tablespoon butter or coconut oil (for cooking)
3 just ripe, or firm-ish bananas

Heat oven to 200°. Combine ingredients from cashew milk through cinnamon in a blender, food processor or Nutribullet type device. I like to add the liquid first (except the water) so the powdered ingredients don’t cake up at the top of the mixing cup. Process until combined. Add water until the desired consistency is reached. Cashew mile thickens the batter substantially. Slice the bananas into thin slices, set aside.

Heat a large frying pan on medium (I use a flat pancake pan, but any flat pan will do) smear a tiny bit of the butter or coconut oil on the pan then pour the batter to create 3 inch diameter pancake rounds. Place 3-4 banana slices on the top of each. When the batter starts to bubble, flip the pancakes. Cook 1-2 minutes on the other side, then transfer banana side up, to a cookie sheet and keep in the warmed oven while you cook the remaining pancakes. Repeat the process from greasing the pan to cookie sheet until all the batter has been used up.

Serve with maple syrup and peanut butter.

Makes about 30 pancakes, but this is all that was left…
